GF & Vegan Banana Walnut Bread

Helllooooooo Walnut Banana Bread 😍

I was walking to class this morning and it finally felt like fall weather. I knew I had some bananas at home and wanted to make a banana bread that wasn’t made with almond flour or all purpose GF flour. I looked online and stumbled upon @ambitiouskitchen recipe for a banana bread made with chick pea flour. Not going to lie I wasn’t sure how this bread would turn out... especially since I was using an egg replacer. This bread was amazing!!!!! Definitely my most favorite banana bread recipe that I’ve tried. It’s not wet which sometimes is the case with GF flours. I cannot wait to have this recipe on repeat. All my acid refluxers— this recipe is friendly.


3 medium ripe bananas, mashed

3 tablespoons honey

2 teaspoons vanilla extract

2 large eggs (Flax or egg replacer for V)

2 tablespoons coconut oil, melted and cooled

1 1/2 cups chickpea flour (garbanzo bean flour)

1 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon salt.

(I added in chopped walnuts and peanut butter but you can add chocolate chips or anything else.)


Preheat oven to 350 degrees and line a loaf pan with parchment paper. In a small bowl whisk together the chickpea flour, baking soda, cinnamon and salt. In another bowl add the oil, honey, vanilla, eggs. Mix the wet ingredients together with the dry and combine until smooth. Add in additional ingredients (chocolate chips, nuts, dried fruit.) Bake at 350 for 45-50 minutes. I baked mine for 55.
